Winning Salsa Recipe

WATERMELON / JICAMA SALSA (Makes approx. 4 cups)

 

3 cups seeded watermelon, cut into 1/4 inch pieces, drained well
1/2 cup jicama, peeled and cut into 1 inch X 1/8 strips                                                                        
2 kiwi fruit, peeled and cut into 1/4 inch pieces
3 green onions, with green tops included, sliced in 1/8 inch pieces
3 tablespoons finely diced yellow bell pepper
1- 3 tablespoons finely diced fresh jalapeno pepper ( to taste )
2-3 tablespoons chopped fresh cilantro
juice of one large lime ( 2 tablespoons)
1 teaspoon grated fresh  lemon zest
2 tablespoons extra virgin olive oil ( optional )
2-3 tablespoons tequila
salt and ground black pepper to taste

            

            Combine all the above listed ingredients in non-reactive mixing bowl. Stir gently to completely mix. Cover and place in refrigerator to chill for at least 1 hour, to let flavors blend. Bring to room temperature before serving. This salsa is good served with grilled chicken, pork and fish.
