The word "sahtein" in arabic means "to good health" or "may you always enjoy good health."

Taboule Salad


3/4 cup burghol (fine grain)
3 cups water
3 cups fresh parsley, minced
2-3 large tomatoes chopped
4-5 green onions minced
15 fresh mint leaves, minced or 2 tablespoons dried mint
10 pimento stuffed green olives (optional)
1 cucumber peeled and finely chopped

dressing:

1/2 cup lemon juice
1/2 cup olive oil
1 teaspoon hot pickle juice (optional)
1 clove garlic minced (optional)

 

About the chef:

Chef Sandra Bahhur studied at Johnson and Wales university in Miami, Florida. She is an Arab American who lived in the middle east for many years and learned the traditional way of preparing many of the dishes from that part of the world.

During her training at Johnson and Wales University in Miami, she also developed a passion for Latin American cuisine. She has created and extensive menu that also includes dishes from Spain, Italy, and greece.
