Strawberry Walnut Salad

3 oz baby spinach
1/2 oz roasted walnut halves crushed
1/4 oz blue crumble small cheese
2 fl oz strawberry balsamic dressing (recipe follows)
2 ea sliced strawberries

Toss spinach with dressing, walnuts and blue cheese. Place salad in the center of plate so that cheese and nuts are on top. Arrange strawberry slices around plate.

Strawberry Balsamic Dressing
1 lb defrosted frozen strawberries
3/4 cup balsamic vinegar
3 TBL granulated sugar
2 TBL strawberry coffee syrup
2 cup olive oil 80/20 blend
1/4 tsp kosher salt
1/4 tsp ground black pepper

Puree all ingredients in food processor except oil. When smooth, slowly incorporate oil.
