RECIPE
Alligator Sauce Piquant
 

2 pounds alligator meat
1 large onion, chopped
1/4 cup cooking oil
1/2 cup bell pepper chopped
1/2 cup celery chopped
1 can Rotel tomatoes (small)
1 jar of plain spaghetti sauce (plain and about 20 oz)
2 small cans Dawn mushroom steak sauce
1 can mushrooms drained
1 small jar pitted olives drained (black, green, or both)
8 oz beer
salt to taste

Cut alligator meat across the grain into small pieces.  Boil meat in water for about 1/2 hour to tenderize.  In another pot cook onion, bell pepper, and celery cooking oil until soft.  Add all other ingredients, alligator meat last.  Cook on high until comes to boil, turn to low heat and cook about 2 hours or until meat is tender.  Stir about every 15 minutes to make sure sauce does not stick and serve over rice.
